It’s that time of year again, the Holidays are upon us, and if you’re anything like me that means yummy food that you associate with the family gatherings that ensue. But being Paleo or even just Gluten Free kinda hinders many of those delicious holiday classics that you are fond of getting your fill during this time of year. For me that food was sausage balls, and since Bisquick is no where on the Paleo or Gluten Free map I was hell bent on trying to find an acceptable tasty Paleo alternative that was gluten-free. Input praising of the use of grassfed butter in the Paleo diet. Because that is a key to making these Paleo sausage balls melt in your mouth.
Feel free to use some shredded cheddar in here if you like cheese, how much all depends on how cheesy you want it to be.

- 1 cup Almond Flour
- ½ cup Coconut Flour
- 2 tsp Aluminum Free Baking Powder
- 1 lb Sausage
- 5 Tbsp Pastured Butter or Ghee
- Preheat Oven to 350 degrees
- In Bowl Mix Almond Flour, Coconut Flour and Baking Powder
- Melt Butter (quick 1 min zap in the micro will do)
- Use brush to coat baking sheet w/ butter
- Add uncooked sausage and remaining butter into flour mixture
- Mix well with your hands
- Roll sausage mix into balls of desired size and place on baking sheet
- Bake for 20-30 min depending on size of sausage balls (just break one open and make sure it’s all brown through the center)
- Let cool, and then dig in
