Low Carb Keto Brownie Cheesecake

Gaaaaah! It’s been sooooo loooooong since I posted anything! First I apologize, but I have been busy busy. I’ve managed to finish up my degree and get a new job. I also got a new Guinea Pig (read BF aka TasteTester). Along with putting himself on the frontline of potential recipe disasters he also is an experimental Guinea Pig that likes to try and make new Paleo and Keto recipes for me so I can have food, because lets face it sometimes with cooking I just get lazy!

Lazy Recipe: Paleo Pigs in a Double Blanket

Paleo Pigs in a Double Blanket

Paleo Pigs in a Blanket? Well Bacon Blanket, more like Double Wrapped Bacon Blanket. So I was trying to do a smoothie recipe and was thinking “I’ll be different!!! Kale instead of spinach!” Let me tell you something, there’s a reason everyone uses spinach in a blender. Kale in a blender? Well lets just say it was a gritty smoothie #experimentfailed.

Of course it probably doesn’t help that I completely suck at getting food out of a crockpot in a pretty fashion, it’s more of stick two utensils in there, try to grab hold of something and hope for the best. And that kind of gambling gets you a pork tenderloin that looks more like pulled pork.

The Grokkin New Year

Paleo Mimosa

Happy New Year to all! If you want an alternative paleo solution to mimosas well there it is, just be careful and make sure to follow the directions in the order they are in, or you’ll wind up like me with a chemical reaction you never knew existed. Apparently if you pour you champagne in first and then dump your orange juice right  in it fizzes like crazy and you get sticky mimosa everywhere! Yes there was a science experiment that unintendedly (is that even a word?) took place in my kitchen.

Paleo Sausage Balls

Paleo Sausage Balls

It’s that time of year again, the Holidays are upon us, and if you’re anything like me that means yummy food that you associate with the family gatherings that ensue.  But being Paleo or even just Gluten Free kinda hinders many of those delicious holiday classics that you are fond of getting your fill during this time of year.  For me that food was sausage balls, and since Bisquick is no where on the Paleo or Gluten Free map I was hell bent on trying to find an acceptable tasty Paleo alternative that was gluten-free.  Input praising of  the use of grassfed butter in the Paleo diet. Because that is a key to making these Paleo sausage balls melt in your mouth.
